Week 4 (Day 29)

Happy 1 month!  One month down with only 1 slip-up! Thanksgiving went well.  Mom Mazur is also doing low carb, so there was lots of On-Plan foods.  There was even low carb pecan pie which was amazing! I made this SO GOOD broccoli salad:  http://www.modernlowcarb.com/recipes/2015/1/10/broccoli-bacon-salad-low-carb-gluten-free-ketogenic There was turkey and mashed cauliflower (and regular mashed potatoes for those not on Keto), and Brussel sprouts with bacon and low carb cranberry sauce, and so on!  It was great...until it wasn't.  I've had some pretty bad tummy pains since thanksgiving.  I don't know if it's the food (a lot more greenery than usual), or if it's my, uh, monthly visitor who was 2 weeks (and 1 day) late and CRAZY heavy.  I just hope the tummy sadness clears up soon. Anyway, nothing more to report.  I was off Wednesday - Saturday, so I was able to keep low carb without too many temptations.  Stefan and I went to a "Br...

Day 23

Oh. My. God.  We get it, Thanksgiving is 4 days away.  Today has been some sort of food hell.  Look at these emails!!! TWO different cookie emails, a pie email and left over food email!  The good news is that the "leftovers in the faculty lounge" was low carb (romaine, ranch dressing and chicken): Because I cheated on Friday (3 days ago), it was SO tempting to cheat today.  I mean, there were cookies everywhere!!  I stayed in my office and only left to run errands.  I hope I can make it through the holidays.

Week 3 (Day 22)

Welp, I slipped up this week.   I did so good all week.  I turned down candy at multiple meetings.  Look at this, a huge bowl of candy: I did great right up until Friday.  On Friday, Stefan had ice cream in the house.  I made a bowl for JJ (yes, I'm trying to fatten up my skinny toddler).  JJ took 2 bites and then wandered off to touch the TV with his sticky baby hands: I thought one bite wouldn't hurt...and then one more...and then a whole bowl, and then some grilled cheese sandwiches.  Uggh.  Such a bad day.  I told Stefan that it was because we didn't have any easy low-carb food.  Sometimes with JJ I don't have time to make up eggs or a hamburger.  It's nice to just eat a hot dog or some lunch meat while chasing my little cruiser around. I went right back to low carb saturday and then today (sunday), Stefan let me spend $50 on quick and easy low carb foods like lunch meat, hot dogs, tomatoes, lettuce, sausage, chee...

Week 2 (Day 15)

So far so good!  Last week I went to the gym religiously...until Thursday, when I was off of work and just didn't go.  I continued not going to the gym for the rest of the week.  I'm so swamped at work that finding an hour to go to the gym seems unthinkable.  I know I'm more productive when I get back from the gym, but I may take a week off. Temptations defeated:  Walmart was giving out free cupcakes: Why Walmart?!  That's my favorite dessert!!!  Stefan wanted to take me to Olive Garden for our 3 year anniversary, but I talked him into something more keto friendly, Outback.  I got the steak and all you could eat shrimp.  Uggh, the shrimp in garlic butter was horrible!!  Still it was a nice outing and I stayed low carb.   So far, 15 days with no cheats!

Day 10

First thing I see when I get in the office is this email: Seriously?  2 days in a row of non-keto free food (albeit muffins and apples).  Sometimes I think my work is the witch from Hansel and Gretel, just trying to fatten us up. Lol. I shouldn't complain, right?  So many bonuses in what is already an awesome workplace.  I just wish they offered more protein and less simple carbs.  Oh, yeah, I voted today. YAY voting!

Day 9

I wasn't going to post today, but temptation reared it's ugly head, so I thought I'd share.  I got this email today: Seriously?  Why are they always feeding us here?!!!  Luckily I didn't get this email until I got back from the gym.  I am MOST motivated to stick to keto right after the gym!  Well, that and because I was at the gym I didn't see this email until an hour later, when all of the food was probably gone! As always my friends, KCKO

Week 2 (Day 8)

I made it through my first weekend!!  Hooray!  Friday was super busy.  JJ had his 15m shots.  He absolutely loves his Doctor, so the shots were worth it. After that, we came home, I fed him and he PASSED OUT for 2.5 hours!  When he woke up we got changed and went swimming.  That was a total bust.  He was unhappy being in the not-super-warm water (it was 82 degrees), and screamed and shivered as I changed him out of his swimsuit and into a a warm bear outfit: The rest of the day was spent on chores.  I vacuumed and did laundry and dishes and snuggled JJ.  When Stefan got home, I ran out to the gym for 20 min on the elliptical. Saturday was the one day I skipped the gym. Stefan took JJ out from 12 to 3 and I worked on homework.  I only left the house once on Saturday, and that was to pickup a pizza for Stefan.  Luckily, pizza isn't a trigger food for me, so I kept ketoing on with some cheese hotdogs and chicken. I went ...
